Swiss researchers can tell chips from barrels

Researchers at the Changins Engineering School in Vaud, Switzerland, have discovered a method with which they can analytically differentiate wines "aged" with wood chips from those in barrel. The work was done by...

...Sébastien Butticaz, an oenology student, and André Rawyler, his professor of chemistry. The method is based on the percentage of empyreumatic compounds in the wine, which are different in chips and casks because of the way the latter are toasted. The result could help detect false claims made by winemakers. Few boast that they are using chips, but many say they use barrels. If we are to believe the coopers, the dramatic increase of wood chips sales in Bordeaux indicates that there is a market there for the Swiss technique.
